Have a craving for something sweet, but don’t want a whole cake hanging around the house? Try one of these mug cakes and enjoy a single-serve treat!
Chocolate Mug Cake
Combine milk, oil, brown sugar and vanilla extract in a bowl. Add flour, cocoa powder, baking powder and salt and mix until the batter is smooth. Pour the batter into a large, microwaveable mug and drop a spoonful of peanut butter (or Nutella) into the center of the batter. Top with chocolate chips and microwave for 70 seconds. Top with ice cream or whipped cream and enjoy immediately.
Coffee Cake in a Cup
Mix soften butter, sugar, applesauce, vanilla, flour, baking powder and salt until just combined. Top with strusel (butter, flour, brown sugar and cinnamon) and microwave for about 60 seconds. Serve and enjoy right away!
Vanilla Mug Cake
Melt butter in a microwaveable mug. Add milk, vanilla extract, egg yolk and sugar and mix. Mix in flour and baking powder, add sprinkles and stir. Microwave for 60-90 seconds (the top will look set when done). Cool for one minute and enjoy!
Carrot Cake Mug Cake
Mix flour, brown sugar, cinnamon, nutmeg, melted butter, shredded carrots, baking powder and milk. Dump the batter into a mug and microwave for 60 – 90 seconds. Top with whipped cream and chopped pecans.
